BAT's (Bacon Avocado & Tomato) & Wedge Salad


OK. So by now you have to realize that my husband and I love avocados. Really, we do eat other things, but it just so happens that life gets busy sometimes and making a quick meal is easy to do when you have the protein packed Avocado on hand.

So here's a twist on an old classic. Bacon Avocado & Tomato Sandwiches.

You could easily omit the "veggie bacon", as I know some are repelled by the sight or mention of pseudo-meat. If you endeavor to try it, then the Morningstar variety works well (but I'm certainly open to suggestions). The key is the preparation of this veggie bacon. I do not recommend microwaving it....stove top prep does the trick.

The wedge salad is a nice refreshing sort. Serve it on the side, with some fresh corn on the cob and ...voila! You have a super fast, super easy meal!


Veggie Bacon, Avocado & Tomato Sandwich
(serves 4)
12-16 slices meatless bacon (Morningstar)
1 TB olive oil
1/2 tsp garlic powder
8 slices thick bread
2 TB mayo or spicy mustard (depends on your preference)
2 fresh jalapeno thinly sliced (optional)
1 avocado, sliced
2 large tomatoes sliced
Salt and Pepper

Heat the olive oil in a skillet. Lay slices of bacon (not overlapping) on the skillet and heat over medium heat. Sprinkle with fresh ground black pepper and garlic powder (or other seasoning you like). Cook, turning occasionally until crunchy and browned - about 6 minutes. Set aside.

Toast the bread. Spread mayo or mustard (or both) on each slice of bread. Pile on the tomato, avocado, jalapeno (optional) and bacon. Season with black pepper. Top with remaining slice of bread.

Wedge Salad with Blue Cheese Vinaigrette
Serves 4













Mix together:
3 TB white wine vinegar
1 small shallot finely diced
1 tsp Dijon Mustard
Pour in
1/2 cup extra virgin oil
slowly in a steady stream, whisk.
Whisk in 2 TB crumbled blue cheese.
Season with salt.
Cut a head of iceberg lettuce into 4 wedges.
Drizzle with the vinaigrette and sprinkle each with more blue cheese.
Season with fresh ground black pepper.

  1. A, when I still ate Morningstar, I found toaster ovens to be perfect for cooking the fake bacon. Took no time at all and crisped it up nicely. Good idea on the avocados!
