Corn & Chile Salsa Eggs with Avocado and Veg-Sausage Patty

What better day to kick off my first recipe, than the 4th of July. This one is seriously easy and requires very little effort. It's a nice and light start to a day sure to be filled with veggie burgers and Morningstar Italian Sausage Kraut Dogs.

Ingredients:
(serves 1)
1 Egg
Trader Joe's Corn and Chile Salsa (or similar)
Avocado
Morning Star Veggie Sausage Patty
Extra Virgin Olive Oil (EVO)
Cayenne Pepper
Fresh Ground Black Pepper
Fresh Cilantro (to garnish)

Add 1 tsp EVO to skillet. Cook egg to your preference (sunny side up, over easy, etc). While egg is frying, sprinkle with ground pepper and cayenne to your preference.

Meanwhile, heat sausage patty for 1 minute in microwave.
After egg is done remove from skillet. Add sausage patty to the frying pan for a few seconds on each side to brown.

Scoop 1-2 TB of corn and chile salsa over egg. Sprinkle with cayenne pepper (if desired) and more fresh ground black pepper. Garnish with fresh cilantro.

Slice avocado and drizzle with EVO. Sprinkle some cayenne and black pepper over avocado.
